



Gourmet's philosophy
As far as i'm concerned I would talk of philosophy, that is love of knowledge of food flavours to get to taste true. In fact all the work done in the kitchen find its mission in the search of taste, eliminating of the course all that is chemical.

The hotel Lusiana offer its guests many possibilities : relax, sport and fun but our excellence come from our kitchen because its owner is also the Chef and precisely Mr Luigi Bergamino. In the last years he has been studing wine and food tours for those who want to know this beautiful ( and good ! ) land. Moreover the central location of the hotel Lusiana give a possibility to search together products of Valli di Lanzo, Canavese and arrive in the nearby Savoy.
Our kitchen starts from finding the best local products and preferably more niche and less known. Those foods that we think are to express the true identity and traditions of the area and the culinary culture of the people who lives in Our goal is to discover and savor the creations of both food cooked according to tradition, that with the use of tricks and techniques, designed to enhance and maximize the flavor and aroma of each individual product, such as the "joke Fassone nature ".
An example of what we mean by "niche product or little-known" is the char, a fish 's fresh water, which lives only in the pure waters of the mountain, its meat has a delicious flavor and delicate. In the spring - summer use edible products offering the "wilderness" that is, herbs, mushrooms and more. On this issue you can also develop guided tours, tours to other places suited to this kind of food.
In the autumn, the focus turns to the mushrooms, which the Lanzo Valleys are famous for the scent of this fungus, pepper "Square of Cuneo" or the variety "Carmagnola" .... Even the bread and breadsticks deserve the "right about it," we use the special "breadstick water" produced by Mauro Bakery Demartini of Valperga Canavese. Particular attention also to dedicate the goodies end of the meal (fruit, chocolate, etc.), creating ice cream in the house, in which we use mainly different pastries, chocolate and cocoa of the best houses in Piedmont, Tonda Gentile delle Langhe, when in season strawberries and wild our own woods .... and last but not least "genepy Occitan."
The wine is then crucial to obtain the best feelings during a tasting food and wine. Although it is not our property located in an area for viticulture, we are geographically located about 80 km from the Langhe, to Canavese 20 km and 30 km from Pinerolo Torino Hill and the last three areas are part of the Royal Road Wines, also in same places we have our trusted vendors, available to host you for a visit to their cellars.
The Hotel Lusiana, as well as offering many possibilities for relaxation and sport, being the "local cuisine" its true excellence, has been studying food and wine tours to learn about and "taste" the Piedmont. The paths are really a lot of taste, you can take tours of one or more days in search of typical products .... Toma di Lanzo, Toma of the lait brusch, Mourianeng, Seras of the Fen to name a few cheeses, salami Liturgy, Salampatata, Mustardela, mocette and mountain charcuterie in addition to the delicious meat of Piemontese cattle breed and then ... Torcetti Lanzo asparagus, corn ancient Piedmont, Ratte potatoes, tench Pianalto of Poirino and much more! Recall also, that our guests also in full compliance with the guidelines given by the professionals of ecology, trying to use "foods km 0", the concept that you have to buy raw materials from selected manufacturers, but as much as possible near the hotel, even we make use of their own production for some vegetables.
